Veggie-Filled Taco Salad

So this is going to be one of those recipes that isn’t the most visually appealing, but I promise it tastes amazing.  This is also a very versatile recipe.  You can make the taco meat and throw it into warmed tortillas, wrap it up in lettuce, throw over nachos with melted cheese, or eat it over chopped romaine to make a salad–which is what I did today.

Let’s be honest: any idiot can throw ground beef into a pan and top with taco seasoning.  That’s boring.  In this taco salad recipe, we’re incorporating a bunch of veggies and seasoning them with the ground turkey taco meat.  This is a great way to make your meal cheaper–you can use less turkey since you’re adding so many veggies, plus it makes the dish healthier which is an added benefit.  When I make this for dinner, Lyle and I always have leftovers for lunch the next day.  I consider that a huge win.

You can dress this up however you’d like.  I like to put the taco meat over romaine lettuce and top with freshly grated cheddar (shred your own dang cheese, people), salsa, avocado, cilantro, lime juice and a handful of crushed tortilla chips.

Serves: 4-6


Taco Meat Filling:

  • 1 lb ground turkey (not pictured bc raw meat is gross)
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 can petite diced tomatoes
  • 1 can organic black beans (drained and rinsed)
  • 1/2 pkg Trader Joe’s taco seasoning

Salad Toppings:

  • salsa
  • avocado
  • crushed tortilla chips
  • cilantro
  • lime juice
  • shredded cheddar cheese (or cotija or chihuaua)


  • In a pan over high heat, brown the ground turkey.
  • Once the turkey is almost 100% cooked through (approximately 5 minutes), add in the onion and bell peppers.  Sauté until the onions are softened (approximately 2-4 minutes).
  • Add in the garlic and sauté until fragrant (approximately 1 minute), then stir to combine.
  • Add in the drained black beans and the can of diced tomatoes.
  • Add the 1/2 packet of taco seasoning and stir to combine.

  • Allow the meat to simmer for a few minutes for the sauce to thicken.  Then turn off the heat and assemble your salad or taco toppings.
  • Layer down chopped romaine then the taco meat followed by the cheese and other toppings as you wish.  I love to use a generous squeeze of fresh lime instead of adding any additional salad “dressing”.  With the salsa, avocado, and lime juice you really don’t need any additional sauce.

  • While on the #Whole30 challenge, the unthinkable happened…I learned to LIKE cauliflower.  I blame this recipe and some of the other stir fry dishes we made that used fresh cauliflower rice.

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.
