What’s Up Wednesday – Week 7

So last week I was traveling and missed being able to post this What’s Up Wednesday post.  I have a lot of  things that i’m working on for future posts, and I’m really excited about what’s to come for Cooking In Cleveland!  Even though I was traveling last week, I didn’t want to miss out on posting about my “Galentine’s Day” Celebration/Party.

As i’m sure most of you are aware, a certain much-hyped chick flick debuted at movie theaters a few weeks ago.  Since three of my best girl friends live either on the other side of Cleveland or in another state, it’s not always easy for us to get together.  We decided to take this opportunity to have a little girls party with cocktails, snacks, and movies before heading over to the theatre.

Full disclosure: I am not normally a baker.  However, I thought that we needed to have a sweet treat and decided to make these cupcakes by Sprinkle Bakes.  I had some strawberries on hand so I decided to chop them very fine and soak them in champagne for about an hour before straining them and throwing them into the champagne pastry creme filling.  I highly recommend the champagne strawberries since they add an extra pop of freshness.

My friend Shay made these yummy pizza bites using wonton wrappers and a cream cheese herbed filling with marinara dipping sauce.  They were so yummy and extremely versatile.  For another savory app, I made mashed potato bites with cheddar cheese and crispy bacon.  Honestly I have never made these before and just kind of invented the recipe as I went based on flavors that I like and other recipes that i’ve made in the past.  Perhaps I’ll remake them soon and share the recipe?  These were super easy to prep ahead and I brought along sour cream to the party so people could top their bites as they made their plates.

The older we get, the harder it seems to be to get together on a regular basis with all of my best girl friends.  It’s nice to have an excuse to plan an entire indulgent silly day with each other and stuff yourselves on delicious foods, champagne, and cocktails…even if you have to plan it out a whole year in advance.  So here’s just a  little reminder to make time for your girls and celebrate the chances you do get to reconnect and hang out in person.  Also, appetizers don’t have to be stuffy or boring.  Think about some of your favorite food combinations and just experiment a bit.  You’d be surprised what you can come up with!

  • While on the #Whole30 challenge, the unthinkable happened…I learned to LIKE cauliflower.  I blame this recipe and some of the other stir fry dishes we made that used fresh cauliflower rice.

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.
