What’s Up Wednesday – An Interview with Reed Jaskula from Platform Brewery

A few weeks ago I reached out to one of our favorite Cleveland Breweries, Platform Brewery, to see if they’d be willing to grant me an interview.  The goal was to just learn a little more about the people behind the brewery and to see what’s next for Platform.  Lyle and I love going to Platform because they have an awesome patio, good beer, and they’re dog friendly.  They don’t have their own kitchen per-say so there isn’t a set menu, but they sync up with some local folks, restaurants, and food trucks to provide food out of the front kitchen area.

This week i’m featuring recipes that utilize the Mexican Chocolate Milk Stout, Cocoa Suave, from Platform Brewery.  Later this week i’ll feature an interview with one of the founders of Platform Brewery, Reed Jaskula.  On Tuesday, I featured an ice cream recipe hack that takes boring vanilla ice cream and kicks it up with a beer concentrate, cayenne, and cinnamon.

This week’s posts will all be featuring the recent release from Platform Brewery, Cocoa Suave Mexican Chocolate Milk Stout.  It’s a delicious dark milk stout that has flavors of pecans, cinnamon, and cayenne pepper.  It’s a delicious bold beer that ends with a nice spicy finish that is surprising but not overpowering.  I’m working on typing up the interview I did two weeks ago with Reed Jaskula, one of the founders of Platform Brewery, and will be featuring that later this week.

Today’s recipe post is a bit longer than the traditional weekday recipe.  I would recommend that you start this on a weekend as part of your meal prep, but honestly, you could easily throw it into your crockpot in the morning and have dinner on the table within 30 minutes of arriving home after work.

I tried BBQ chicken pizza for the first time several years ago when I was studying abroad in London.  It was one of those late night “I need to eat something before we go out” dinners where my roomie ordered it and I was dubious.  I don’t normally crave BBQ chicken pizza and we don’t have it often, but the other day I got a craving and couldn’t stop thinking about trying to make my own version.

The focal point of this recipe is the spicy sambal oelek marinated chicken.  This was a marinade recipe I found on one of my favorite blogs, Shutterbean.  I’ve made it several times since and its definitely a summertime favorite around here.  A very important note about the marinade though: it has a significant amount of vinegar so your eyes might water if you spend too much time hovering over it while it simmers to reduce.  Just turn on the exhaust above your stove and…hold your breath when you stir it, it helps.

This is a recipe that i’ve been tinkering with for several years.  It’s really informal.  Most nights, it’s just the chicken, pasta, wine, lemon, and whatever I have in my fridge.  Sometimes pasta dishes can feel a little heavy.  This dish cuts that with a nice bright garlic-lemon-wine sauce and a heavy handed veggie-to-pasta ratio.

Why should you have to choose between drinking your wine or pouring it in your food?

This week I wanted to spotlight one of my favorite places in Cleveland–The West Side Market.  If you’re a Cleveland local, chances are that you’ve been there (probably a million times).  The West Side Market just expanded hours last year so they’re now open on Sundays which is really convenient.

  • While on the #Whole30 challenge, the unthinkable happened…I learned to LIKE cauliflower.  I blame this recipe and some of the other stir fry dishes we made that used fresh cauliflower rice.

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.

  • My go-to tomato sauce and meatball recipe is live on the blog today!  We're kicking the heath factor up a notch by using ground turkey to make the meatballs.  Also the sauce can be made almost completely with pantry staples!
