This dinner came about on one of those days where I felt like I had been eating pasta, carbs, cheese, and just overall junk foods. I needed to eat some vegetables, but I didn’t want to feel like I had to eat yet another salad. Just because you’re trying to eat healthy and eat a veggie-based meal, doesn’t mean that you have to punish yourself with bland food! This meal is extremely versatile–basically take all of the vegetables that you have that are close to withering away in your crisper drawer, chop them up and throw them in this! There really aren’t any rules.
