Chicken Ginger Stir Fry Over Cauliflower Rice

As i’ve mentioned before, Lyle and I completed our first “Whole 30” last month.  Going through this process has not only changed my approach to certain foods, but also challenged us to try new foods that I previously “didn’t like”.  Enter: cauliflower.

I have a distinct memory from my childhood of my parents refusing to let my sister and I leave the table until we finished our broccoli and cauliflower at dinner.  This inevitably led to tears and a meltdown because I was an extremely overdramatic child…sorry mom and dad, but in my defense, you served me steamed cauliflower.  Gross.

Since grains aren’t allowed during the Whole 30, we started trying out cauliflower rice as a way to complete some of our go-to dishes.  I have to say, I was really surprised when we first tried cauliflower rice because I actually liked it.

We prefer to buy the head of cauliflower and “rice it” ourselves in the food processor (just pulse it a few times–15 to 20? to get the consistency you like).  I did try to buy the Trader Joe’s pre-made cauliflower rice during the Whole 30 and I couldn’t eat it.  Maybe it was all mental, but who knows.

So we have finally made it to the end of our Whole 30 experiment which means that I should be back to a more regular posting schedule now.

We’re making a delicious raid-the-garden style soup that is versatile, cheap, and comes together quickly.

So it’s been a little quiet over here on Cooking In Cleveland and I feel like I owe you guys an explanation.  Roughly sixteen days ago, my fiancé and I decided to try to complete our first Whole 30.  For those of you that aren’t familiar with the “Whole 30” concept, it’s a diet that is basically an elimination plan.  It basically says: no added sugars (including natural sugars like honey or stevia), no alcohol, no soy, no dairy, no grains (including healthy grains like quinoa and no corn), and no legumes for 30 days.  It’s a commitment to eliminating foods that are known to cause inflammation, common food allergies, and also to learn what foods are “food triggers” for unhealthy habits.

To say that the intro to this 30 day challenge has been tough is probably an understatement.  Sugar withdrawal is no joke!  I read the Whole 30 book and ordered the cookbook before we decided to jump in and try this, and also there are a ton of food bloggers that have recently written about their Whole 30 experiences which were really helpful.  If anyone wants any more information about the Whole 30, you can check out their website or comment below and i’ll answer anything that I can.  It’s been fun to try out new recipes from the Whole 30 cookbook, and i’m compiling a lot of new recipe ideas for upcoming posts.  On the downside, i’ve been doing a terrible job of organizing myself enough to photograph recipes as i’m cooking since I typically am quite hangry when I get home from work. (Allegedly that will stop in the next few days?  Pray for me.)

  • While on the #Whole30 challenge, the unthinkable happened…I learned to LIKE cauliflower.  I blame this recipe and some of the other stir fry dishes we made that used fresh cauliflower rice.

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.
