My Favorite Tomato Sauce with Turkey-Basil Meatballs

Today’s recipe is one of my go-to Sunday dinners.  There are very few meals that are more comforting than a big bowl of spaghetti and meatballs, right?  I made this dinner a few weeks ago when my mom was in town visiting and served it alongside a large side salad, crusty garlic bread, and nice bottle of Chianti.  To make garlic bread, I typically just lightly coat the thickly sliced bread with olive oil on each side then pop it in the oven for 10-15 minutes at 375 degrees F.  After it’s lightly brown on both sides, remove it from the oven and take a whole garlic clove and just slightly rub the top of the bread with the garlic clove.  You’d be amazed at how much flavor just the one clove can give your bread!

For the salad, I just washed some spring mix and spinach that I had in my fridge and tossed it with some chopped peppers, local Tomz cherry tomatoes, and freshly grated parmesan cheese. I picked up a Stonewall Kitchen Olive Oil Balsamic Dressing the other day at my local Heinen’s grocery store and placed that on the table so that people could dress it themselves.

Today’s recipe is a result of one of those trips to the grocery store where you aren’t quite sure what you want to make for dinner and you’re hungry.  As I walked in to do my grocery shopping I was gravitating toward the produce and felt like making something light and healthier for Spring.  What I ended up with was some beautiful baby Yukon gold potatoes, some broccoli, lemon, eggs, and really good salmon filets.  This dish might seem complicated with the poached egg and roasted vegetables, but the entire dish can go from cutting board to dining table in about 1/2 an hour.

This is a recipe that i’ve been tinkering with for several years.  It’s really informal.  Most nights, it’s just the chicken, pasta, wine, lemon, and whatever I have in my fridge.  Sometimes pasta dishes can feel a little heavy.  This dish cuts that with a nice bright garlic-lemon-wine sauce and a heavy handed veggie-to-pasta ratio.

Why should you have to choose between drinking your wine or pouring it in your food?

So this recipe was another one that was recommended to me by my coworker’s wife, Barb.  (amazing woman, never steers me wrong)  I made this dish for the first time late last year.  I have probably made it every other week since we first tried it.  It’s so yummy.

Did your mom ever try to feed you Campbells Tomato Soup as a kid (from concentrate)?!  I swear your mom loved you even though that crap is disgusting.  Not only is Campbells Tomato Soup crammed with sodium (i’m talking 17% of your daily allowance of sodium in 1 serving), but you also have to water the soup-goop down before you can eat it….mmm appetizing…NOT.

AKA a really great way to disguise that you’re eating mostly veggies for dinner…

Sometimes you arrive at a Sunday evening and realize that you’ve eaten like crap the entire weekend–too many pieces of bacon at brunch, maybe a margarita or two (or five?) too many, and perhaps a couple of burgers or cheese plates?  (Burgers are my love language, don’t judge.)  You feel like crap, you’re sluggish, and you realize that you need to shovel some veggies into your body asap or risk your pants not buttoning Monday morning when you’re headed to the office.  No?  Just me?

If you’re like me and have ever had “that kind” of a Sunday, this dinner is for you.  It’s an extremely delicious yet healthy way to start your week–yet it seems decadent.

  • While on the #Whole30 challenge, the unthinkable happened…I learned to LIKE cauliflower.  I blame this recipe and some of the other stir fry dishes we made that used fresh cauliflower rice.

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.

  • My go-to tomato sauce and meatball recipe is live on the blog today!  We're kicking the heath factor up a notch by using ground turkey to make the meatballs.  Also the sauce can be made almost completely with pantry staples!
