This is one of those recipes from my childhood that I instantly crave when i’m homesick or having a bad day. It’s relatively quick, easy, cheap and tasty. …Aaaaand it gives you roughly 30 minutes after it goes into the oven where you can pour yourself a glass of wine and put your feet up after a long day before it’s ready to eat.
This is not your momma’s meatloaf recipe. Let’s face it: meatloaf dinner does not sound very appetizing and i’m guessing that some of you shudder in fear with memories of a gross bland meatloaf you were probably served as a kid. I promise that there is nothing bland about this recipe. Crushed tortilla chips replace 1/2 of the breadcrumbs, and you glaze it with a salsa-brown sugar mix that is equal parts spicy and sweet.
Today’s recipe post is a bit longer than the traditional weekday recipe. I would recommend that you start this on a weekend as part of your meal prep, but honestly, you could easily throw it into your crockpot in the morning and have dinner on the table within 30 minutes of arriving home after work.
