This is one of those recipes from my childhood that I instantly crave when i’m homesick or having a bad day.  It’s relatively quick, easy, cheap and tasty. …Aaaaand it gives you roughly 30 minutes after it goes into the oven where you can pour yourself a glass of wine and put your feet up after a long day before it’s ready to eat.

The normal go-to recipe calls for two packages of Jiffy cornbread mix combined with an egg and a can of creamed corn to create the cornmeal crust.  Full disclosure: I sent Lyle to the grocery store for the items for this recipe and he returned with a “healthy” alternative…ugh.  However, I have to hand it to him, if you mix cornbread mix with some frozen corn, corn chowder mix, and an egg, it works just the same.  So, for the sake of ease: if you cannot find creamed corn, you can make the cornbread per the package directions, but i’d recommend adding a tbsp or two extra of milk and some defrosted frozen corn for texture.

Mom’s recipe also calls for ALOT of shredded cheddar both in the taco pie and on top of the cornbread.  I also like to serve this with some sliced avocado, extra salsa, and cilantro/lime juice.  Those are all optional though.  If you want an easy, no-fuss dinner, this is equally good shoveled directly out of the casserole dish, just don’t tell my mom.

  1. Add the ground meat to a large skillet over medium heat and brown.
  2. Preheat the oven to 350.
  3. Once the meat is fully cooked, add in the diced onion and bell pepper. Cook until the onion is softened, about 5 minutes.
  4. Add the taco seasoning and salsa to the meat and mix. Drain and rinse the black beans, and then also add to the skillet. Turn off the heat.
  5. In a large mixing bowl, combine the two packages of cornbread mix, the egg, and the can of creamed corn. As I mentioned before, I had to make "makeshift" creamed corn with frozen corn and corn chowder. If you find yourself in a spot where you can't get creamed corn, comment below and i'll share exactly how I made this work.
  6. Grease a medium casserole dish (I used a 13x9), then layer half of the cornbread mix at the bottom. Add a layer of cheese. (roughly 1/2)
  7. Add the cooked meat/onion/bean/pepper mixture to that in an even layer. Then cover with the remaining cornbread mixture and layer the last of the cheese on top.
  8. Allow to bake in the oven for about 1/2 an hour or until a knife inserted into the center comes out clean.
  9. Slice to serve. Top with additional salsa, avocado slices, or sour cream. Enjoy!

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.
