Easy One Pot Roasted Chicken with Root Vegetables

Today’s recipe post is a typical Sunday dinner around our house.  You also might notice that i’m not the person in the photographs.  That’s right, this recipe is a Lyle original.  Around our house, I can do roasted beer can chicken, but he’s the real boss that literally uses the chicken to truss itself.  Sound impressive?  Definitely, but it honestly takes less than 20 minutes to prep and i’m going to talk you through it today…with ALOT of pictures.  I apologize in advance for posting pictures of raw chicken but…it’s a good recipe with some good tips.

  1. Preheat the oven to 425 F.
  2. You need to rinse the chicken inside and out with cold water. Remove any giblet packets if your chicken came with them and discard. After you've rinsed the chicken inside and out, let it drain in a colander in the sink while you prep your vegetables.
  3. Gather your vegetables. You're going to slice off the fronds of the fennel and just large dice the bulb of the fennel. Wash and peel the carrots and cut into inch sized pieces. Wash and dice the potatoes. Peel and mince the garlic.
  4. Add all of the cut vegetables to the bottom of a large heavy-bottom dutch oven. It's key that you're using a vessel that is oven safe because you're putting this into a really hot oven. LOOK AT THAT COLOR!
  5. Generously salt and pepper your vegetables and drizzle with olive oil.
  6. Take the chicken and pat it completely dry with some paper towels. The key to getting crispy chicken skin is making sure that there's absolutely no water left inside the chicken or on the skin. Otherwise, you're just going to be introducing steam which doesn't let it crisp up.
  7. You're going to generously season the inside of the chicken with salt, pepper, and herbs. Lyle used thyme, oregano, and a little bit of dried rosemary.
  8. After you've seasoned the inside, we're going to shove some halved lemons inside the cavity. This is going to add a ton of flavor to the chicken, especially since you're trussing it, all of the steamed lemony juices will be sealed inside which makes for a really tender chicken.
  9. So at this point we're going to truss the chicken. I have pictures with the next 3 steps to show how to do this, but you can youtube "truss chicken with its skin" and it should come up. Also I apologize for all of the raw chicken pictures but this is a good skill to learn so you don't have to use kitchen twine.
  10. You need to cut two slits on each side of the chicken near the cavity. You then just take each drumstick and stick the ends through the opposing slit in the skin.
  11. It should look like this when it's trussed.
  12. Go ahead and place the trussed chicken breast side up on the root veggies. Generously drizzle with olive oil.
  13. Take the same spices that you used on the inside cavity and sprinkle them generously all over the outside. Also salt and pepper the chicken generously.
  14. It should look like this when it goes into the oven. Go ahead and throw that sucker in the oven for an hour and a half or until the juices run clear when you cut near the leg.
  15. Enjoy!!

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.
