This week’s posts will all be featuring the recent release from Platform Brewery, Cocoa Suave Mexican Chocolate Milk Stout.  It’s a delicious dark milk stout that has flavors of pecans, cinnamon, and cayenne pepper.  It’s a delicious bold beer that ends with a nice spicy finish that is surprising but not overpowering.  I’m working on typing up the interview I did two weeks ago with Reed Jaskula, one of the founders of Platform Brewery, and will be featuring that later this week.

Today’s recipe is part of a two part recipe.  I decided to take the beer and transform it into something that you might not normally associate with beer–I made a cake and ice cream.  I decided to reduce the beer to really help concentrate the flavor before adding it to the ice cream and cake.  Rather than make my ice cream completely from scratch, I decided to hack a pint of vanilla bean ice cream from Ohio creamery, Greater’s.  This is a really easy method to spice up ice cream and really make it your own without spending hours making and freezing an ice cream base from scratch.

Instructions
  1. Add the beer to a small sauce pan and bring to a simmer. Allow it to simmer over low heat for about 40 minutes or until the mix has reduced by about half.
  2. Once the mix is reduced, allow it to cool completely.
  3. Add the softened ice cream, cayenne, cinnamon, and 3 tbsp of the beer concentrate to the bowl of your KitchenAid stand mixer (or any regular bowl that you can use a hand mixer in).
  4. Stir the mixture until the spices and beer have mixed throughout the ice cream. Transfer the mix back to the pint container and place back in your freezer to solidify. Enjoy on its own or wait for Thursday's cake recipe!

  • While on the #Whole30 challenge, the unthinkable happened…I learned to LIKE cauliflower.  I blame this recipe and some of the other stir fry dishes we made that used fresh cauliflower rice.

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.
