Spicy Sambal Chicken Pita Bowls

The focal point of this recipe is the spicy sambal oelek marinated chicken.  This was a marinade recipe I found on one of my favorite blogs, Shutterbean.  I’ve made it several times since and its definitely a summertime favorite around here.  A very important note about the marinade though: it has a significant amount of vinegar so your eyes might water if you spend too much time hovering over it while it simmers to reduce.  Just turn on the exhaust above your stove and…hold your breath when you stir it, it helps.

  1. Combine the ginger, sambal oelek, Sriracha, fish sauce, brown sugar and rice wine vinegar.
  2. Add the cubed chicken to the mix and allow to marinate for about 10 minutes.
  3. While the chicken is marinating, add the peppers and onion to a sheet pan. Top with olive oil, salt and pepper, and add to the oven to roast. They're going to need about 20 minutes in the 375 degree oven. Toss the veggies halfway through so that they can get nice and golden on all sides.
  4. Remove the chicken from the marinade and place on skewers. We have metal reusable ones from Amazon. If you use the wooden ones, you need to soak them for at least an hour before you skewer the chicken on them.
  5. Take the marinade that you had the chicken in and add it to a medium saucepan. Bring to a simmer over medium low heat and allow to reduce by about half. It will take approximately 30 minutes and you'll need to whisk the mix consistently throughout the process.
  6. You're going to grill the chicken. While it's cooking on the grill, baste with the reduced marinade at least 2-3 times. Once it's cooked through, remove from the heat and top with chopped cilantro.
  7. Cut your pitas (I like Aladdin's Whole Wheat Pocket Pitas) into quarters. Serve with the chicken, peppers and hummus.

  • While on the #Whole30 challenge, the unthinkable happened…I learned to LIKE cauliflower.  I blame this recipe and some of the other stir fry dishes we made that used fresh cauliflower rice.

This dish is mostly #Whole30 compliant except for any additions you might make to this recipe such as #Sriracha for added heat or swapping soy sauce instead of the coconut aminos.
